Course summary In this Master students will learn more about adjusting ecosystems, making food systems healthier and more sustainable. A programme centred around topics such as circular economy, ecology and health.
Course description Students will cover modules on systemic and transition thinking, focused on the food system in an urban context; by using practical issues from urban contexts. Students place their own background knowledge into the broader context of urban food systems. Students are taught theory of systemic thinking and the corresponding transitions in the current food system. This theory is then applied using practical examples in a workgroup setting. Students gain insight into the various dimensions of the urban food system: the green dimension aimed at sustainability (ecology), the dimension of healthy food and consumption behaviour in an urban food system (health), the sociological dimension (society) and the economic dimension (economy). Students learn to measure the impact of existing interventions on the current food system. Fieldwork is included, data are collected to validate the research question. The field work will take place in a country other than their own. Aeres UAS will be working with 4 int. partners. Data gathered will be analysed and theses will be written (focus on the design and validation of a solution that contributes to the transitions of urban food systems).

Course objectives Design solutions that lead to interventions for the challenges of the current food system in an international urban context. The goal is for students to place their own background knowledge and that of their peers into the broader context of urban food systems.
